“Corn has been part of the diet of North Americans for thousands of years,” says Kim Arrey, a dietitian and nutritionist. “It is a good source of folic acid, and a source of vitamin C and fibre along with many important phytonutrients.”
Corn is also an important crop for farmers. Using plant biotechnology, plant breeders have developed corn varieties that resist certain herbicides and allow farmers to control weeds without tilling the soil, which benefits the environment.
